About Vegetables

A fruit is the part of a plant that develops from a flower. It's also the section of the plant that contains the seeds. The other parts of plants are considered the green sections and these include the stems, leaves and roots.
Vegetables contain health-enhancing plant compounds that are loaded with vitamins and minerals. Not eating enough vegetables can be the cause of having mortal diseases such as cancer, high blood pressure, stroke and diabetes. People should be motivated to cultivate and also eat more vegetables.

90c –Common Beans - (Phaseolus vulgaris)
The common bean is a herbaceous annual plant, grown worldwide for its edible dry seed or unripe fruit that are both known as "beans".
Beans are grown in every continent except Antarctica. Brazil and India are the largest producers of dry beans, while China produces, by far, the largest quantity of green beans. Similar to other beans, the common bean is high in starch, protein, and dietary fiber, and is an excellent source of iron, potassium, selenium, molybdenum, thiamine, vitamin B6, and folate.

130c - Bell Pepper - (Capsicum annuum)
All sweet bell peppers start as green peppers, which are both edible and nutritious at this stage. The three most popular varieties are the milder yellow and red bell peppers, along with the younger, slightly pungent green bell peppers. Fresh extracts from cucumbers have both antioxidant and anti-inflammatory properties, which includes vitamin C, beta-carotene, and manganese. Eating cucumbers can reduce risk of estrogen-related cancers.

220c - Eggplant – (Solanum melongena)
The eggplant is a delicate, tropical perennial often cultivated as a tender or half-hardy annual in temperate climates. The flower is white to purple, with a five-lobed corolla and yellow stamens. The egg-shaped glossy purple fruit has white flesh with a meaty texture.
Nutritionally, eggplant is low in fat, protein, and carbohydrates. It also contains relatively low amounts of most important vitamins and minerals. A 1998 study at the Institute of Biology of São Paulo State University, Brazil, found eggplant juice to significantly reduce weight, plasma cholesterol levels, and aortic cholesterol content.

Okra is called "Yambo" in Aruba. The pods are usually gathered while they are green and at immature stage. The plant is cultivated throughout the tropical and warm temperate regions around the world for their fibrous fruits or "pods". The pods are rich sources of dietary fiber, minerals, and vitamins and often recommended by nutritionists in cholesterol controlling and weight reduction programs. The pods compose healthy amounts of vitamin A and other components which are essential for the vision.
