Skalica is one of the oldest and most picturesque towns in the Záhorie region. Its historical streets, vineyards, rich cultural heritage and traditions create a unique atmosphere and the smell of freshly baked Skalica trdelníkhas been an inseparable part of it for centuries. This sweet speciality is made of fine yeast dough, which is wound around a wooden rod, a trdlo, and baked over an open fire. Once cooked, it is coated in sugar and ground walnuts. The recipe was brought to Skalica from Transylvania at the end of the 18th century by the chef of Count József Gvadányi. The inhabitants of Skalica gradually improved it and it became a speciality and one of the symbols of this free royal town. In 2007, the Skalica trdelník became the first Slovak food product to be recognised as a Protected Geographical Indication by the European Commission. The town of Skalica has, to this day, kept to the original method of production within the historical black kitchen of the Franciscan monastery. Here the traditional method of baking over an open fire of beech wood is preserved. It gives the pastry an unmistakable taste and beautiful aroma. The reputation and original recipe of this traditional speciality is also protected by the citizens’ association Skalický trdelník, which unites the local producers. Thus, the Skalica trdelník remains a living legacy of a fair handicraft, respect to the traditions and the people who have proudly passed this heritage on to the following generations.
